5 Delicious, Balanced Breakfasts for your Recovery
Updated: Dec 1, 2022
I don't know about you all, but honestly, I can eat breakfast food at any time of day or night. I am going to share some very simple, balanced breakfasts that can contribute to having a better relationship with food. These have been my staples while in recovery.
OVERNIGHT OATS
Very biased, but this is the BEST breakfast of all time. If you have a sweet tooth in the morning, this meal would be perfect. You can add ingredients like powdered peanut butter and protein powder to your liking. Overnight oats are full of fiber and high in protein (if you add a powder). You can use any topping you desire in terms of fruits, nut butter, etc. This meal gets its name because you are supposed to let the mixture of oats, liquids (water or milk), and powders sit in the fridge overnight.
Here's a list of ingredients I like to use: My chocolate/vanilla peanut butter recipe!
Overnight Mixture
Bob’s Red Mill rolled oats
2 tbsp of PB Fit
1 tbsp of ground flax seeds
1 tbsp of chia seeds
1 scoop of Orgain creamy chocolate fudge / vanilla protein powder
Water or almond milk (less water = not runny)
Toppings
Fresh blueberries
Fresh strawberries
crunchy almond butter
PROTEIN PANCAKES
Recently, I have been OBSESSED with the Kodiak Protein-Packed Flapjack and Waffle Mix. This brand carries an extra serving of protein over other brands. All that you have to do is add water to the mix and then cook like any other pancake! I love butter in my pancakes as well. On the top, I will add maple syrup, almond butter, and blueberries or bananas. This is super simple and also perfect if you have a sweet tooth in the morning.
AVOCADO TOAST
I know, it sounds super basic but I promise, I keep it interesting. If you enjoy a savory breakfast, this one's for you! First, you are going to make a piece of toast. Once you are finished, add avocado by spicing and/or spreading it on top of the bread. Finally, add your preferred toppings.
Here’s a list of ingredients I like to use:
1 ripe avocado
1 or 2 pieces of Food For Life Ezekiel 4:9 sprouted grain bread
Kerrygold Pure Irish Butter
½ cup of Trader Joe’s 100% Liquid Egg Whites
Salt and pepper to season egg whites
Pickled Onions (to your preference).
Sriracha drizzle
Trader Joe’s Everything But The Bagel seasoning
A squeeze of lemon juice
GREEK YOGURT PARFAIT
Greek yogurt can be sweet, delicious, and packed with protein. And you cannot forget the granola! To get the protein benefits, I purchase plain greek yogurt and mix it with protein powder to make it sweet. It is not a yogurt parfait without your favorite fruit toppings! If you need a good granola recommendation, try to find a grocery store that sells it in bulk. Where I like to shop, it can come in so many unique flavors. My favorite is a maple and almond mix.
Egg Bites (If you need a very quick breakfast!)
When I am in a rush or running later than usual in the morning, I will microwave egg bites from the store. The brands I purchase are the Trader Joe’s Cheese, Spinach, Kale Egg Bites, and Three Bridges Egg Bites. The egg bites from Starbucks are a go-to if breakfast is a drive-thru mission.
